how to complete those vehicle theft missions?

i should get a trash car and a motor boat but both of them get destroyed by the police etc. before i reach the target.... i tried it several times but always the same, too slow vehicles.
 
Either use the Remove Police Notoriety entry in your phone that you get from Mayor Reynolds, or just use the RC Possessor and bring them back that way which never gives you any notoriety at all.
