So hi, I'm looking for something along the lines of the Xbox 360 button layout mod in GoTR but for the PS3, would that be hard to make and is it a fix I could do myself?

It's already an option in GotR. I'm kind of surprised you missed it since it's in the same menu as the 360 button one.
