Mouse control for flying planes. Maybe similar to battlefield 3 or 4. Keyboard is not so bad for helicopters and VTOL, but very frustrating for regular planes.

do I need to load to a save before defeating satan and complete all the side quests to get this ending? or does the cutscene play regardless?

you can just press E to dodge the missile if you buy the flight upgrade with cluster, its not a trouble
